Grilled Sides for steak


D ads everywhere know that every grilled entrée needs an equally delicious side to go with it. But why try to grill and simultaneously prepare side dishes on the stove? Simplify your family's dinner-try grilling sides while you cook your favorite steaks.

Corn on the Cob

Corn on the cob is not only a delicious, sweet vegetable that goes great alongside many grilled items like Omaha Steaks juicy Boneless Pork Chops, but it's also very easy to grill. Unlike boiling, grilling the corn on the cob caramelizes its natural sugars and enhances the sweet flavor. When selecting corn, look for bright green husks and light yellow stalks to ensure you've selected young corn.

Once selected, pull off the bright green husks and remove the silk. If desired, you may dot the corn with one tablespoon of butter, adding salt and black pepper to taste. Wrap each cob tightly in aluminum foil to lock in moisture. Place the aluminum foil-wrapped corn on the grill. If available, top racks work best for corn and also make it easy to grill meat below. If the grill doesn't have a top rack, place the corn on the outer edges of the grill. Rotate the corn every five minutes for approximately 20 minutes or until the corn is tender.

Grilled Sliced Potatoes

While there are hundreds of ways to cook a potato, grilled potatoes are a sure crowd-pleaser. Wash one large potato per two people under cold water. Slice the potatoes into thin slices or wedges, and distribute them evenly on a sheet of thick aluminum foil (2-3 potatoes per sheet). If preferred, add one teaspoon of butter per potato onto the sliced potatoes. You may also want to add diced garlic, onion slices, seasoning, and salt and black pepper to taste. Add a couple of ice cubes to the potato slices for moisture. Cover the foil sheet of potatoes with another foil sheet, pinching at the sides to form a flat foil packet.

Place the foil packet directly on a medium-heat grill. Potatoes do not require much attention while cooking, and should take 20-30 minutes. Once the potato wedges are tender and pierce easily with a fork, serve immediately after grilling. Pro tip: strip steak and grilled sliced potatoes make a great combination that your family will love!

Romaine Hearts

For a salad that's a little out of the ordinary, trying grilling romaine hearts. Grilling romaine lettuce will add to its crunch, and give it a nice, smoky char flavor. One romaine heart is perfect for about two people. Cut the romaine hearts in half lengthwise, leaving the end on so the leaves stay connected. In a small bowl, mix together olive oil, vinegar, and salt and pepper. Lightly brush each side of the romaine heart with the mixture and place it on the grill, cut side down. It will grill very quickly-about 2-3 minutes.

Once the cut side turns a light brown char, remove it from the heat. Serve with freshly grated parmesan and your choice of dressing. Chopped almonds or sunflower seeds are also great salad toppings and usually kid-friendly.
